History

This bakery has been a part of downtown
Spencer, Iowa since 1916.

  • 1916 – 1922: Barton Family Bakery
  • 1922 – 1928: Partlow Family Bakery
  • 1928 – 1951: Carroll’s Bakery – Brothers; John and Joe Carroll
  • 1951 – 1991: Carroll’s Bakery – Siblings; Joe Jr. and Marge
  • 1991 – now: Carroll’s Bakery Owners; Paul and Colleen Thompson

The bakery has survived World War I, the Depression, the Great Fire of Spencer, and World War II. Carroll’s has succeeded on quality service, quality ingredients, and a constantly changing product line that meet the needs of every customer.

Paul and Colleen Thompson have dedicated their lives to supplying the Carroll’s Bakery customers with a large selection of baked goods, that would normally be found in the big city, while still maintaining the great service and uniqueness of a specialty small-town bakery.

Paul started baking for his family in 1980. He enjoyed his time spent in the kitchen so much so that he attended Mankato Vocational Tech. and completed the Baker program there. After graduation, his career took him to Cedar Rapids, Iowa where he worked at the Danish Maid Bakery owned by Colleen’s Father. Fate brought Colleen into the picture as she was attending the University of Northern Iowa, earning a BA Degree in Marketing. After Colleen’s graduation, the couple married and moved to the Twin Cities area. Paul soon worked his way up and became store and production manager of Dorothy Ann Bakery. Within two years, Paul and Colleen decided to take the big step and went looking for their own place.

“We decided on Carroll’s Bakery because of the potential and the strength of its reputation.” As both new and old customers enter Carroll’s Bakery, they are greeted with the day’s enticing aromas as well as a friendly knowledgeable staff.
